Scones recipe

This is a really lovely scones recipe, it makes ten light and moist scones - not crumbly.  If you want to make more just increase the ingredients, for example just double if you want 20.

First turn on your oven to 220 degrees C so it's ready, the scones are very quick to make (which is another reason they're one of my favourites) and grease a baking tray.


You will need the following:
8oz Self raising flour
1/2 teaspoon salt
1oz sugar
2 tablespoons currants or sultanas
1 egg and enough milt to make up to 1/4 pint



  1. Mix flour and salt in a mixing bowl and rub in margarine (hands are best for this)
  2. Mix in sugar and fruit
  3. Beat egg and milk together, add to flour to make a soft dough (save a teaspoonful)
  4. Turn on to a floured surface, roll out to around 1/2 an inch thickness and cut into circles (around 2 1/2 inch)
  5. Place on the greased baking sheet, brush over the tops with the beaten egg or milk
Bake in the oven for around 10 minutes (possibly slightly more for non fan assisted ovens but check at around the 10 minute mark - if they're a nice golden colour then they're ready).

Lovely served almost straight from the oven while still warm...
